I have 2 Domino Servers in a Windows domain. Is there any impact if I changed them from having there own domain to a workgroup?

It Depends (of course)
Most of what it depends on is whether you’re using domain names for anything. Like if the Domino servers are running as a service account that’s a domain member.
Depending on how you’re doing it, you might also be impacted if you’re running IIS in front of the Domino servers and authenticating domain users through to the Domino resources that way.
There might be some other circumstances where you’d be impacted as well, but they pretty much all are related to you having domain users interacting with the Domino server somehow.
Changing the Windows domain doesn’t really impact the Domino server or its function though if you’re not doing anything like that. I duplicate a Domino server I have running in my DMZ domain back on the trusted domain for dev/testing with no trouble.
