In the Notes client, I know that you can use delivery options to prevent copy/forward/print. I’m also aware of a 3rd party product called Fetch to “unsend” Notes mail. Is there anything available to provide these features for Notes mail that is sent outside of the organization (like internet mail)?

I think you have a misunderstanding about how mail works as well as such systems that advertise the ability to “unsend” messages. I rarely say “never”, but it would be almost impossible to guarantee doing what you describe. There is no way to ensure access or control over mail sent to some unknown organization. Once they have it, they can do what they want with it and refuse any future “request” by you on the outside – or even from the message itself on the inside – to delete the message (or try to prevent printing, copying, etc).
For every method you can think of to secure and/or retract you email, I can think of multiple methods to circumvent it. If I can see the message onscreen using a PC that I have full rights to, it is mine.
Besides, why would an organization agree to allowing you to retract a sent message? And they would have to agree in advance in order for this to work.
Circumventing the “no copy/forward/print” capability in Notes is trivial. It is enabled by setting the “$KeepPrivate” field to “1”. Run a simple agent to change the field to “0” or “” and you’ve bypassed it. I actually screen for “$KeepPrivate=1” as part of our anti-spam system (because every message I’ve ever seen set with “$KeepPrivate” set is spam), I reset it to “0”, and give it a high spam probability rank. I don’t grant any outside organization the right to try to prevent anybody in our organization from copying, printing, or forwarding any message that has been sent here. Why would I?
Anyway, without full cooperation of the recipient organization, retracting or restricting use of email messages has zero hope of being effective. You’d have just as much luck putting a note at the bottom of the message saying “you may not copy, forward, or print this. You must delete this message when I request it.”
