Maximum limit

I am aware of the 32kb limit for a field but is there an overall limit for a document?

Summary data? Not sure what you mean by that sorry. Is that a collection of all the fields or just specific field types?

Generally, anything that is NOT Rich Text is considered Summary data automatically. That means that it’s available to be shown in view columns.

From the help …

Items are flagged as containing summary or non-summary data. Summary data can appear in views and folders; non-summary data cannot. In general, items created through the UI are tagged as non-summary if they contain rich text or are very long.

You can turn off the Summary flag for existing document items with the notesItem.IsSummary property.

This would indicate to me that limit for each text field is 32K, because that’s the summary data limit / field

I have checked several documents in, for example, the notes agent logs that I produce all the time, and the summary data for some of the documents is much larger than 64K.

Can you specify where this number came from, please.

You might want to check the individual fields (items) in the document properties – the docs have a 64KB summary limit. It IS documented, and has been tested and proven to still be in effect in current versions.
