I always wanted to know if there is a way to interrupt a fixup task for example.
Imagine if you run a ‘load fixup’ and you forgot to add the folder.
Is it possible?

The question should be is it wise to interrupt a task rather than possible.
Sometime there is no other way to deal with a TASK that is stuck. ROUTER / REPLICATOR etc. This will clear allot of task based issues.
Now there are some tasks that I would think would not be a good idea to stop. FIXUP for instance, the risk of corruption and the corruption not being fixed is high. Below is a snippet from the Domino Admin help.

Yes, I know that it’s probably not the best idea to stop or interrupt a task that is running.
I have to stop the tasks once in a while and I am aware of the "tell q’ commands.
But for example, imagine if you run the fixup task in a folder with 5.000 databases. And you wanted to do it in some other folder which was smaller.
Can you use the ‘tell fixup q’ ?

It is possible to tell a FIXUP to QUIT. It is as much a task as any other.
