The installation of Fix Pack 3 for domino 10 in Centos. It is installed correctly but the domain does not recognize the version. It is displayed as if it had no fix pack, it remains in 10.0.1 and should appear as 10.0.1 FP3
Has anyone had this problem or should I open a case in HCL?

I believe the only supported Linux flavor is RHEL and SUSE.

It could be that you are running incompatibility issue due to running CentOS.

actually, CentOS IS supported by Domino v10.
It was mentioned multiple times by HCL (for example on Engage 2019 or RNUG 2019) and even there are few technotes:

Since CentOS is almost the same as RHEL, there is no reason to not support it.
Why CentOS is not marked as supported OS in system requirements is a good question to person that has written this document.

I know I had a similar problem a while back updating my test server on CentOS instance. I remeber fixed that by uninsrtalling and reinstalling.
Do not trust what is shown in the Admin client, go on the server console and issue the command "sh ser" it will tell you the version

take a look in admin4.nsf on that server - there should be "Place server's Notes build number into Server record" request triggered by Administration server.
Probably it is failed for some reason or your server is not administration server for names.nsf/admin4.nsf. Mark it active to repeat again and issue "tell adminp p a" in console. This should solve issue.
Otherwise, you may uninstall fix pack and install it again to create new "Place server's Notes build number into Server record" adminP request.
