I am writing an application for German users and so want to access accents for titles etc eg various letters with an umlout above them.
It seems so simple …

Short version, Notes lets you enter composite characters that aren’t otherwise available from your current keyboard by pressing the key sequence Alt-F1, followed by a pair of characters. In most cases, the pair of characters you’ll type after Atl-F1 to create the extended character will be intuitive (such as ss for ß and e" for ë)

Or, of course, you can copy and paste from elsewhere.
Or, if you have a German computer, the keyboard should just have those keys on it.
