The release notes contain the most current information for each version. The 6.0.1 release notes will not list Windows 2003, so that tells you that it isn’t supported; 6.0.1 will run on Windows 2003, but it’s not certified, so you won’t receive support if there’s an issue.
6.0.3/6.5.1 were the first versions of Domino to support Windows 2003.
