I do not be able to set Notes as the default email when using Edge in Windows 10.8.5.3 notes being used

Chances are windows 10 uses a different reg key.

That being said install Notes 9 on a windows 10 pc and find the needs reg keys , Export to a reg file and then import on you Notes 8.5.3 pc

Probably the cause of the issue is that Notes 8.5.3 is not supported on Windows 10:
