I know that upgrading the server before the clients is preferable.
What if I upgrade my server and take 1-2 months to get to the clients. Could there by any problems that would arise from that scenario?

Any problems I have seen in the past have been related to having different versions of the Notes client, rather than having different versions of the Notes client and Domino server. There might be some minor technical issues related to particular versions, but we have been running some heavy duty Notes apps in a Notes 6.5.x / Domino 8.5.x environment for several years without problems.
