After deploying the Lotus Notes client to all our workstations and laptops, we have decided we do not want to sync the Windows NT password with the Lotus Notes password. Some of our users will have some confidential information that we do not want others to see.

in earlier versions there was a service that needs to either be disabled or removed. “Lotus Notes Single Logon”. In ND7 that may have changed, see below link.

First of all, if someone is using that Workstation with the Windows credentials, then they may already have the password for Lotus since I would suspect that most people would use the same password. If the users aren’t sharing their passwords, then the SSO shouldn’t be a problem. They would just need to lock their workstation. (Windows Key + L is a really easy way to do this on XP and above).
To turn this off, though, go to File > Security > User Security and deselect “Login to Notes using your operating system login”.
