Is there a way to temporarily suspend an email account? Since I don’t know if this can be done the only alternative I can think of would be to set up forwarding to send ALL incoming email to another person.
Or set up an out of office message asking all email senders to initiate contact with someone else in this person’s absence.

It depends what you want to accomplish:
If you just do not want the person to receive any email messages, edit the person document and remove the mailfile filename. Change the mail System to None. Senders will receive a “no such user” message. Restore system and filename when the user returns.
If you do not want the user to login to the client, remove the person document altogether.
In both cases, if you leave the mailfile on the server, you can point the person document at it later, and all the old messages will still be there.
