Is there some way for a user to grant access to another user to only one folder in his or her e-mail account? Or is there a way to copy all the contents of an e-mail folder without having every message included inline?

If you grant access to the mailfile, all the messages would be viewable.
If the other person only needs to know date/sender/subject, you could use Edit>Copy Selected as Table and paste that into a message. Delete the column with the doclinks.
You could copy the documents into a database the other person can access, or into the other person’s mailfile if you have access (or have the admin do it for you).
If there is an ongoing need, create a rule that will send a copy to that person.
