Any way to grante access to certain folders within a mail file ?

even if the answer was YES, the documents in the folders would not be protected and would be available in the All Documents view or the user could create their own view to display whatever documents they wanted to. But if you want to you can use folder level security found by opening the folder and going to Actions > Folder Options > Design then click the Key tab in the properties box.
