I’m quite new to Notes development, so any help you can give me is greatly appreciated. I have a main document set up with several response documents. I have “completed” fields in all the forms so I can tell if the forms have been fully filled out or not. If the main doc has been saved but not completed, and a response doc has been completed, neither doc shows in the “Completed” view, but the main doc shows in the “Incompleted” view as it should. Can I get the response doc to show in the Completed view?

You should be able to get the responses doc in the Completed view.
Have a look at the view properties and you will see ‘Show response documents in a hierarchy’. This by default is ticked which means response documents will only be shown with main documents.
If you untick this option you should be able to see response documents in the view.
