I’m looking for a way to analyze incoming mail documents and identify ones coming from certain relay servers, in order to file them. However, I cannot find the SMTP header data in any items in the Document Properties dialog. Where is this data kept?

Have a look in the items names “received”.The router adds them to the document. When the message has been router through some servers, each hop is recorded in its own “received” item.
