I have a problem where a user is looking for emails from a certain contact in his ‘All Documents’ view, some of the emails are filed by the contacts first name, some by the last name and some in inverted commas. Is it possible to have all emails from a certain contact/email address ordered together?

on what is send by the email program of the sending user.watch the FROM in your mails.
it should reflect the values the documents are sorted by.
so if the email client does not delivier proper information or differnt ones today and the next day than you would see this emails as from two different senders.

Subject: template modify to show email address
You could modify the template so that this column shows the email address instead of the username. This should be more consistent. You would want that column to display INetFrom or SMTPOriginator.
It is still possible that the person would change their email address, so you still might have more than one entry for an individual. And you would have to know the email address, not just the name, to look for them.
