I have mail databases with 1,2 o 3 GB.
Many times I see CPU at 100%
Can I configure this DB to update by night or something else ?
Any help ?

is it always the same database, regularly?
Try taking it offline and running housekeep against it.

Ncompact
Nupdall -r
or just try updall -r on it to fully rebuild the index.
