Be aware of the long standing Microsoft operating system 32-bit page pool limitation.
If your users are reasonably quota’d, then this might not pose a significant amount of risk … but on the other hand, if your user mail file quota’s are allowed as “large” [everybody’s definition of large is different], then at some point you will be running up against this ceiling.
64-bit on the other hand has significantly increased the same page pool limitation so it would serve to give you a whole lot more page pool headroom to work with…
both IBM and Microsoft have documented this condition in a variety of published technotes / KB articles … as a starting point for reference;
A lot of Admins I know like to keep at least one version behind so as to give them more room to move if their production version proves problematic.
Upgrading to a newer release is automatic via the installer however downgrading is not. It can be done but is trickier.
I’m running 8.5 on both server and Client, Win 2003 32 bit. Can definitely advise that 8.5 Client seems to crash less than 8.x. 8.x releases don’t recover from crashes from my experience either, as NSD doesn’t clean up properely and computer restart is required.
8.5 Server seems quite stable and necessary if you plan to use X-Pages. If not, I’d probably stay with 8.02 on the server as not much else has changed.

There are several other benefits available for Domino 8.5 that organizations take advantage of. For example, achieving lower costs through: DAOS, Domino Configuration Tuner, and reduced I/O & CPU consumption
It was looking like Notes/Domino 8.5 was a little unstable on Win 2008 Server from what I was reading here but it looks a little more positive now. To back level a server can be time consuming sometimes. I’ll leave it at 2008 Server and watch closely until I roll it out for production.
