I’m new to the Lotus world, and I have a question that I’m having a hard time finding an answer.
In short, can a Lotus Notes client, version 6 or 7, connect and interface with a Lotus Domino server, version 8?

I know, a short and sweet answer. The good thing about Notes and Domino is that a lower client can access a higher server. Now, if the user is using a lower client, you should never upgrade the mail file to a template version higher then the client the user is using.
You can do it, but the results may be unpredictable and the user may come to hate you for it.
