We are going to move a Traveler server to new hardware. Do we need to move any data from the existing server to the new or is it just to install Domino and then Traveler on the new hardware, change server address in the mobile phone and off we go?

If you are going to change the server address, the clients will have to be reconfigured and slow sync, so there is not much help in moving anything over. If you are changing the server address, you might as well just start fresh.
