I will be moving my Domino server to a new box in a week, but in the meantime I am critically short on space on the current box. I don’t have a partition that I could move my entire mail directory to, but I have enough room to move a couple of the large mail databases to a folder on another partition. Can I move just a couple of the mail databases to another folder and use database links? Are there any functional problems doing this?

Create a Folder Link from you Domino Administrator. This will create a .dir document in the data directory (or folder). Open the DIR folder and delete the line under the text if there is one. This sometime stops it working because you have not added an ACL to the folder. Then place your Mail DB’s there after checking the folder is visible in the Domino Admin.
Then change the Mail pointers (person document etc) to the new location.
This will allow you to have your DB’s else where without having to create several database links.
