Hope this hasn´t been posted before, but after I installed the Public Beta 1 part of the Character Set seems to look a bit wrong - see here:

With the first beta of Notes 8.5 for OS X from January nothing like this showed up.
Can I change my settings somehow to get rid of this “look” ?

Try changing your system locale to English and it should clear up.
Subject: regional settings
I did change my regional settings to German/English/English(USA) - all of it didn´t work. I don´t have to change my local settings outside of Notes, or do I ? The 1st Beta of 8.5 I installed - on 10.5.x - in English - did work perfectly fine. Maybe I just wait until the end of August, when the Beta 2 of 8.5 should be available.

it’s not locale it’s language
System Prefs->International shows the langage priorities; just drag and drop the priority list and the next time an app launches it’ll respect it.
In my case: an app containing E and D lang shows the UI in E, another containing F and I shows the UI in F.
Subject: possible workaround (not tested - no mac here)
-Duser.language=en-Duser.country=US
This has helped me in some cases with other early IBM betas. I think the first of the two lines was already enough, but am not sure.
Frustrating: I think the system should fall back on English by default if there is no translated Version - I am running into this all the time (different IBM betas).
