Can I log if a calendar entry is removed on my smartphone ?

It depends on how much detail you want and where you want it.On the device, there is the log with tables for each sync that shows adds/updates/deletes. This will show the deletes.
On the server, if you have FINEST level tracing for the user, you will see deletes with detail in the Activity logs. If you have usage logging enabled, you will see the deletes in the usage log as well.
