Does Notes 7 have a log of all chatting going on between notes clients using the Notes IM? We need to research some issues

If you have not built anything, or purchased any 3rd Sametime party logging solution then there is no logging of IMs taking place. Nothing comes out of the box for doing it and nothing has been logging it without an installed solution.

FYI this is client side archiving, so you would need to install this on every client, and if you were archiving for compliance reasons, you would not be compliant.

Be aware that Sample DLL has had issues in various releases, it should not be considered reliable. One version gave every chat the exact same date and time for example. It is a sample DLL and should not really be considered for production use or again compliance.

FYI - we’re using the sandbox template on our ST server and it works great for importing the files that get created using the instructions posted in the second link. The chat log files get imported into the db every night and are nicely displayed in a notes document format. Then the import script cleans up the files on the server. Works nice and no need to setup on every client.
