I have taken over a system which seems to have a lot of redundant information on the forms, which creates duplicate information on the documents. Are there any programs out there to perform analysis on how fields are used throughout domino applications?

You can get a lot of this information with a design synopsis. The formulas for all fields on the forms selected will be displayed at least, for your review.
Other synopsis data would be used to consolidate the fields, such as knowing which views need to be updated if you remove fields. Agents and script libraries will also need to be reviewed to make sure any references are properly updated.
