Does anyone know how to clear out deleted field names from the FIELD selection list (on the right bottom of the screen from designer)?? My list shows existing and previously deleted field names. Would like to only see the current fields.

First you must be absolutely sure that the field names don’t appear in any documents or design elements–you must check both. Next do a copy style Compact (Compact -c) of the database (which is like creating a new replica but not exactly). That will do it.

Copy style compact? The only compact I’m familar with is from the database properties, I just click ‘Compact’. Is this different?

they will be in the database. Because there was a document having the fields it will remain there. Even if you remove those document an the forms which used to have the fields.
You can create a new database and those new fields will not be there.

Compact the Database -C style and the extra fields should be gone.
