I’d like to send an email message and in the body of the email I’d like to say if you have more questions email “abc@123.com”. I’d like that to be a hotspot so that if they click on it, it will bring up a new email with that address prefilled. Is this an easy thing to do? Can I highlight it and make it a hotspot or something?

You’re on the right track. Highlight it and make it a Link Hotspot: Type is “URL” and Value is “mailto:abc@123.com”

You could include CC and Subject parameters as well.
