I’ve been doing some research online but nothing has turned up so far. I’m looking for a way to send a hyperlink or a file via email that, when clicked, would result in Lotus Notes opening up a new meeting entry and pre-populating some of the fields (To, Cc, date, time, etc.). Is there something like that?

Would the person clicking the button be creating the calendar entry on their OWN calendar or on someone elses? If it’s on someone else’s calendar, they may need proper access on that person’s calendar to create an entry. If it’s being created on their own calendar, you might be able to tweak this example and put it in a button then email it. Plug in the required field names as needed in your case…
