Pasting “á” into an email crashes the Notes client. I reported this under the previous beta, got no response. The reason for pasting “á” instead of typing it is that the Notes client lacks a Special Characters menu item, which should be in the Edit menu.

There are standard shortcuts you can use to type accented characters. For example, to type an acute accent, type option-e then the letter (‘a’ in this case). Grave accents are produced with option-`, umlaut with option-u, ç with option-c, etc.
Of course, the crash is still a crash, so we will investigate. Do you have a Crash Reporter log for the crash? (Look in ~/Library/Logs/CrashReporter for the latest ‘eclipse’ or ‘Notes’ log – eclipse if you’re using Standard, Notes if using Basic.) From which application did you copy the character?

Subject: Could you tell us where did you copied the character? The TextEdit or some place else?
This information can help us to judge the clipboard data type provided by the 3rd party application. We have fix a paste bug that may crash Notes, but not sure if it covered your case.
