Could I use Domino for Mail server and I use Microsoft Outlook for mail client.

There are two optionsConfigure POP3/IMAP4 and SMTP on the Domino server and configure the Outlook client accordingly

Use Domino Access for MS Outlook, see http://www.lotus.com/dominoaccessforoutlook (supports email, calendar, tasks, contacts)
