In the mail editor, is there a button available for the taskbars to select the text colour? If not, why not?

Dear Simon,There is no button in Task Bar to select the text colour.Basically Taskbar in mail editor is used for navigation purpose,like go to address book,designer etc.
But to select the text colour you can choose Text → Text Properties → Color in Menubar.
