how can I view all my e-mail (using the “all documents”) with out all other type of documents?
Do I need to create a view with a select for a specific form?

You should do a separtate view, or use the all documents view and do an advanced search (More) on the Form “Memo” only. That will do the trick.
Subject: You would also need reply, and reply with histroy.

Actually, just Reply. Reply with History is a compose-based form that sends as an actual reply.
However, one might also categorize Phone Messages and Bookmarks as mail.
